Meet (some of) The team
Nadine joins us in a new role at Margs Bakery as Production Manager. She will oversee every piece of food made in the kitchen at a high quantity level. This role is high pressure and tough resilience is needed. Nadine leads the team as an exemplary figure of immaculate attention to detail, high level of work ethic and great culture! Taking the pressure off Dave so he can drive the business forward and steer the ship.

the boss
Dave - After 5 years at Morries, he sold up in 2021. Dave always had an eye for the bakery. He loved the vibe and saw the potential. When it hit the market, he and Em jumped on it! Every year since, the bakery has grown to quite the institution.
The goals been simple: keep the heart, tighten the systems, don’t mess with what works. Dave moves fast, keeps things running smoothly and occasionally barks like a dog.. Keep the pace and you’re sweet. Walk slow and he might just run you over.
THE CHIEF
Naz - (Yes weird writing about myself, this was Dave’s idea)
I started my initiation into the bakery fam behind the till when I first moved to Margs. I was actually one of the first hired after Dave & Em took over! Fast forward, I’m now the one chasing good light and trying to feed everyone by insisting that biting into a pastry is “more authentic content!” No one likes to see me coming these days because the crew know they’re about to get papped, but I usually have my small human hanging off of me because everyday is bring your baby to work day.. so he definitely sweetens the deal ;) If you’ve ever come in because something looked too good to ignore, you’re welcome.
THE MARKETING CHICK
Bex - Well what "canny" we say about our star barista Bex. Being born and raised in the Isle of Skye in Scotland Bex makes the best coffee in town and, if that's not enough, brings her beautiful soul to our bakery culture. The mumma of the group but she ain’t no frumpy mumma. She majors in music management, raises animals, and has travelled the world. There isn't anything more comforting than sharing a brew with our Bexi in the morning.
Jill - or "Jilly Bean" as we know her oh so well. The Boss of the front. Don't take too long stocking that drinks fridge because the timer is on. Jilly is our numero uno for customer service. She is the fun one that drives our front team with incredible energy and passion. Delivering exceptional standards to our customers. We don't know what we would do without our jilly bean but one thing is for sure... Don't put scallops on the staff Christmas party menu! #lekker
OUT FRONT & COFFEE
Ceci - Our Chilean weapon! She’s all about the good stuff. Her fav bakery treat(s) - raspberry choc brownie, the smoothies and a classic ham & cheese croissant. When she’s not firing up the grill, she’s off to the beach or out on a bush walk. We asked if she’s sticking around Margs and got a straight up “FOREVER!”.. so yeah, we’re keeping her!
Paula- All the way from the Canary Islands, with a solid background in the cafe culture! She’s cool, calm and always on it. Our raspberry brûlée tart takes Paula’s heart! Outside of work, she’s usually chasing waves at her favourite beach, Moses Rock, or slowing things right down with a bit of yoga. Keeping things nicely balanced off the grill!
GRILL & SANGAS
Chris - All the way from reunion island Chris is the unexpected.
Such an interesting character who will talk to anyone and show them the ropes. This is someone you could crack a bottle with and talk all the way through the night whilst he shares his endless, and somewhat surprising, stories of the past. He is a skilled pastry chef by trade and his level of work is undoubtedly one of the best. The one that gets up at 1am to open for business. Chris for President!
Mutsumi - If there is ever more accuracy or precision than in a Japanese baker then please tell us. Mu is dedicated to her work and won't rest until it is just right. Beautiful fluffy bread 7 days a week is down to this lady and we couldn't be more thankful. A warming soul that enjoys salsa dancing, cooking and travelling. Such a beautiful character in our kitchens all the way from Osaka in Japan.
BREAD & croissants
Sam - joined our team back in 2022 as a Kitchen hand! He had almost no kitchen experience whatsoever but is driven by passion for bakeries, common sense and a taste for exceptional hard work. A keen surfer, occasional model and fitness fiend he is an integral part of our kitchen operation. Managing our baking systems and keeping the team on track. He is passionate and qualified in marine management hence his route to Margaret River. A True English lad but also, you wouldn't think it. Look out ladies.
Alex - is our cheeky German queen who is the best we have ever seen at baking and decorating cakes. They are insanely beautiful and she has worked incredibly hard getting to this point. Her experience is extensive. Her thirst for the next best cake mixed with her cheeky witt makes her one of the funniest (sometimes scariest) bakery gals to be around. We adore her!
